Only 5-8% of people dream in color on a nightly basis? I find that strange. I have never had a black and white dream that I can remember. I also used to lucid dream quite often to deal with nightmares I was having. The scary part is when you know your dreaming, but you still can't control it.
Well there is a difference between dreaming in color and remembering that your dream was in color. Technically, you never see things in color in your peripheral vision (you only see color in the very center of your vision). Your brain just assumes colors for everything else based on what it knows/remembers. The same can be true for dream memory, you may have had a colorless dream and upon remembering the scenario after waking up, your mind fills in the color for you.

I heard you dream 7 times a night but only remember the most recent one when you wake up. It's odd to think I can dream 7 times and just forget I actually dreamt 6 of them.

I could understand that, because when I wake up and rethink my dream obviously it doesn't last as long as I spent sleeping all night. But there are times where I'll remember like 3 different dreams that I've had in one night. That may be due to waking up in the middle of the night after having them, and then my conscious brain makes a mental note and then I fall back asleep and it repeats when I wake again.
Lately I've been dreaming like, every night.. (More of meaning I wake up and remember the entire dream and not just remembering blackness the whole night) Maybe it's because I've finished school and I'm a lot less stressed out so I can have normal, (sometimes)relaxing dreams again... Instead of dreaming about staircases in my college/high school that I should know where they go, but i never get to where I'm trying to go(or it's really hard to get there). And yes, I've googled what constantly dreaming about impossible staircases usually means... and it didn't surprise me.
